Ingredients

Pastry for 1 crust 9 inch pie
1/3 cup sugar
1 Tablespoon cornstarch
1 8-1/4 can crushed pineapple, undrained
1 8 oz. pkg. cream cheese, softened
1/2 cup sugar
1/2 teaspoon salt
2 eggs
1/2 cup milk
1/2 teaspoon vanilla
1/4 cup pecans

Method

1. On a lightly floured surface, roll pastry to 12 inch circle.
2. Place in 9 inch pie plate. Turn edge under; flute.
3. Combine sugar and cornstarch in a saucepan. Stir in pineapple. Cook, stirring constantly until mixture is clear and thickened. Cool.
4. Spread onto bottom of pastry shell.
5. Combine cream cheese, sugar and salt, mixing until well blended.
6. Add eggs, one at a time, mixing well after each addition. Blend in milk and vanilla.
7. Pour over pineapple mixture; sprinkle with pecans.
8. Bake 35 minutes. Cool. Garnish with pineapple slices and maraschino cherries. Keep chilled.
