Ingredients
  1. 3/4 cup(s) quinoa, dry, cooked
  2. 1/2 cup(s) beans, garbanzo (chickpeas), (from can, rinsed and drained)
  3. 1/2 cup(s) cucumber(s), chopped
  4. 1/2 cup(s) tomato(es), cherry, or grape, quartered
  5. 1/2 lemon, juiced
  6. 1 teaspoon oil, olive
  7. 1 tablespoon parsley, fresh, chopped (optional)
Method
  • In a medium bowl combine the quinoa, chickpeas, cucumber, and tomatoes.
  • In a small bowl, prepare the dressing. Whisk together the lemon juice, olive oil, parsley (if using), salt (if using), and pepper.
  • Pour the dressing over the salad and toss together to coat evenly with the dressing.
