  1. 2 sheets filo pastry
  2. 30 g (1 oz/6 teaspoons) butter, melted
  3. 60 g (2 oz) curly endive
  4. 2.5 cm (1 in) piece cucumber
  5. 125 g (4 oz) smoked salmon
  6. 2 tablespoons Lemon Vinaigrette
Method
  • Heat oven to 200 C (400 F/Gas 6). Cut filo pastry into twelve 8 cm (3 ½ in) squares. Brush with butter and place in 4 individual Yorkshire pudding tins, putting 3 pieces in each. Gently press into tins, then bake for 10 minutes until crisp and golden. Leave to cool.
  • Put endive into a bowl. Cut cucumber into short baton and salmon into strips. Add to bowl with dressing and toss well. Pile into pastry cases serve at once.
