Ingredients
  1. 1 medium-sized chicken
  2. 2 large onions 2 cloves garlic
  3. 1-inch fresh root ginger
  4. 1 lb. tomatoes
  5. 2 dry red chillis 6 cloves
  6. 2 sticks cinnamon
  7. 2 cardamoms oil for frying 8 peppercorns
  8. 2 cartons yoghurt
  9. 1 teaspoon turmeric powder
  10. pinch of saffron salt to taste
  11. FOR THE GARNISH
  12. I tablespoon blanched almonds
Method
  • Skin and joint the chicken. Slice the onions, garlic and ginger finely. Chop the tomatoes. Cut the chilli's into Finch pieces. Fry the cloves, cinnamon and cardamom in a little oil. Add the onions and fry until golden brown. Add peppercorns, garlic, ginger and chillis and fry for five minutes. Add chicken pieces and fry until brown. Put yoghurt in a bowl, add turmeric and saffron and beat until smooth. Add to the chicken together with the tomatoes and salt. Cover saucepan tightly and cook on a low heat until the chicken is tender. Uncover and cook for 10 minutes. Garnish with almonds. Serve with tandoori rotis.
