Ingredients
  1. 12 oz. onions
  2. 1 clove garlic
  3. 1-inch fresh root ginger
  4. 2 green chills butter for frying
  5. ½ teaspoon chilli powder
  6. 1 teaspoon ground cummin seeds 1 teaspoon pepper
  7. 1 teaspoon turmeric powder
  8. 2 bay /eaves
  9. Salt to taste
  10. 8 duck's eggs, beaten
Method
  • Mince the onions. Mince garlic, ginger and green chillis finely. Brown onion in a little butter. Add the ground spices and fry for 2-3 minutes. Add all the remaining ingredients except the eggs. Cook gently until the butter floats to the top. Meanwhile, scramble the eggs in butter in a separate pan and add to the onions and spices. Cook for a few minutes and serve with rice or nan.
