Ingredients
  1. 1 large onion, sliced
  2. Oil for frying
  3. 2 cloves garlic, crushed
  4. 2 green chillis, chopped
  5. 1 large green pepper, chopped
  6. 8 lamb's kidneys, trimmed, cored and cut into pieces
  7. 8 oz. tomatoes, skinned and chopped salt to taste
Method
  • Fry the onion in a little oil until golden. Add the garlic and green chillis and fry for a minute or two. Now add the chopped pepper and fry for a few minutes. Add the kidneys and stir before adding the tomatoes and salt. Lower heat, cover and cook gently until tender.
