Ingredients
  1. 2 large onions
  2. ½ -inch fresh root ginger
  3. 2 cloves garlic 2 tomatoes
  4. 2 lb. spinach oil for frying 2 cloves
  5. 1 cardamom seed
  6. 1 teaspoon chilli powder
  7. 1 teaspoon garam masala
  8. 4 hard-boiled eggs
  9. Salt to taste
Method
  • Finely cut onions into rings and mince ginger; crush the garlic and chop the tomatoes. Wash the spinach and cook in a pan till tender, without adding any water. Drain and purée. Heat a little oil and fry the onion, ginger and garlic for two minutes, add cloves and cardamom and fry for another minute. Put in the tomatoes, fry for a further three minutes then add chilli powder and garam masala. Simmer for 15 minutes or until liquid has evaporated.
  • Stir in the spinach puree and hard-boiled eggs, cut in half. Season with salt and simmer for seven minutes. Serve hot with chappatis.
