Ingredients
  1. 2 onions
  2. 1 green chilli
  3. 1 clove garlic
  4. butter for frying
  5. ½ tablespoon flour
  6. ½ teaspoon pepper
  7. 1 ½ teaspoons chilli powder pinch of salt
  8. 1 lb. uncooked lamb, minced
  9. ½ teaspoon ground ginger
  10. ½ teaspoon ground cinnamon
  11. ½ teaspoon ground cloves
  12. 6 large tomatoes
Method
  • Mince onions and green chilli finely, crush garlic. Fry onions and chillis in a little butter till golden. Add flour and fry for a minute or two. Now add pepper, chilli powder, salt, meat, garlic, ginger, cinnamon and cloves. Cook till meat is tender. Meanwhile, slice off the tops of the tomatoes and scoop out pulp. Reserve tomato cases and tops. Add pulp to meat. Dust each tomato case with a little salt and stand upside down for a minute or two. Fill the tomato cases to the top with meat. Cover with tops, arrange in a greased, shallow bak¬ing dish and bake in a moderate oven (350° F. — Gas Mark 4) for 20 minutes.
