Ingredients
  1. 1) Large potatoes 1 kg
  2. 2) Cashew nuts, broken 5-10
  3. 3) Chaat masala 2.5 gm
  4. 4) Clarified butter (ghee) 2 tsp
  5. 5) Coriander leaves 1 tsp
  6. 6) Cottage cheese, grated 4 tsp
  7. 7) Cumin seeds (jeera) 2.5 gm
  8. 8) Garam masala a pinch
  9. 9) Lemon juice 1 tsp
  10. 10) Oil for frying
  11. 11) Red chilli powder 1 tsp
  12. 12) Raisins 2 tsp
  13. 13) Salt to taste
Method
  • 1. Peel the potatoes.
  • 2. Scoop out the center leaving thin walls at the sides.
  • 3. Fry the potato shells and the scoops separately.
  • 4. Do not let hem change colour but let the sides become crisp.
  • 5. Cool the scooped out portion of the potatoes and mash.
  • 6. Add salt, red chilli powder, garam masala, lemon juice, cashew nuts, raisins and clarified butter.
  • 7. Stuff the mixture into the potato cases.
  • 8. Arrange 4 pieces on one skewer and put grated cheese on top.
  • 9. Grill till golden brown in colour.
  • 10. Sprinkle with chopped coriander and chaat masala and serve.
