Ingredients
  1. 6-8 green eggplants
  2. Pinch of salt
  3. 1 tbsp vegetable oil
  4. 2 tbsp Thai green curry paste (according to taste)
  5. 1 tbsp soft dark brown sugar
  6. 500g chicken breast, cut into chunks
  7. 6-8 kaffir lime leaves
  8. 400ml/14fl oz coconut milk
  9. 1 tbsp fish sauce
Method
  • Wash green eggplant, cut into quarter and sprinkle with salt. Keep aside.
  • Heat oil in a wok or large frying pan. Add the green curry paste and fry for about 1 minute.
  • Add the coconut milk, fish oil, sugar and kaffir limes and bring to simmer on medium heat for 5 minutes.
  • Add the chicken and simmer for 7-10 minutes, until the chicken looks thoroughly cooked through.
  • Add the eggplants and cook for an additional 5 minutes.
  • Serve with steamed jasmine rice.
