Ingredients
  1. Red curry paste 1 ½ tbsp
  2. Vegetable stock ½ cup
  3. Coconut milk 1 cup
  4. Sugar snap peas 125 gram
  5. Carrot 125 gram
  6. Corn on the cob (baby) 125 gram
  7. Pineapple pieces 50 gram
  8. Mushrooms 125 gram
  9. Cherry tomatoes 150 gram
  10. Lemon juice 2 tbsp
  11. Soya sauce 1 tbsp
  12. Brown sugar 1 tbsp
  13. Whole fresh red chilly 1
  14. Fresh coriander 2 tbsp
  15. Oil as required
Method
  • • Heat oil in a pot; fry curry pasta and add coconut milk
  • • When milk starts simmering, add stock, sugar, snap peas, carrots and corn , cook for 5 minutes.
  • • Add pineapples, tomatoes, lemon juice, sugar, mushroom and brown sugar; put on dum.
  • • Dish out curry; garnish with whole red chilli and coriander; serve
