  1. Oil as desired
  2. 1 can of diced Tomatoes
  3. 1 inch piece of ginger-crushed(adrak)
  4. 4-5 cloves of garlic-crushed(lehsan)
  5. 1-2 branches of Curry leaves(curry patta)
  6. 3/4 tea spoons(tsp) each of cumin seeds and mustard(Rai) seeds
  7. Salt 1tea spoon or according to taste
  8. 1 tsp (heaped) Coriander powder(dhania)
  9. 1 tsp Red chili powder(lal mairch)
  10. 1/4 tsp turmeric powder(haldi)
  11. 8-10 green chilies (slice them) or whole fresh round red chilies
  12. 1 Onion-thinly sliced
  • Put oil in pan and add onion
  • Add cumin and mustard seeds
  • Add curry leaves, crushed ginger and garlic
  • Cook for a while and then serve
  • It stays good in fridge for a long time
  • No need to brown the onion just when it softens add the dry spices, tomatoes and green chilies.
