Ingredients
  1. 3 ounces of Seitan (in bite size pieces)
  2. Pita Bread or Whole Wheat Tortilla
  3. Tomatoes (diced)
  4. Onions (diced)
  5. Lettuce (shredded)
  6. 1 tbsp. Fresh Garlic (Lehsan) (minced) (optional)
  7. 1 tsp. Cumin (Zeera)
  8. 1 tsp. Paprika
  9. 1 tbsp. Fresh Herbs (minced) (optional)
  10. Black Pepper (Pisi Kaali Mirch) (fresh ground) (to taste)
  11. Salt (to taste)
  12. ¼ cup Plain Yogurt or Vegenaise (optional)
  13. Hot Pepper Sauce (to taste) (optional)
  14. 1 tbsp. Organic Canola Oil
Method
  • In a cast iron pan, heat oil and seitan over a medium heat. Add cumin, paprika, salt, and pepper. Stir occasionally, until the seitan is cooked through.
  • Compose your sandwich inside your pita bread with seitan, lettuce, tomato, and onions.
  • If you wish, make a sauce for your sandwich with yogurt and herbs or yogurt and garlic - or use hot sauce. If you are vegan, use Veganaise in place of yogurt.
