Yakhni Biryani Recipe

Ingredients
  1. Chicken piece ½ kg
  2. Rice (soaked) 300 gram
  3. Butter 1 cup
  4. Water 1 cup
  5. Onions 2
  6. Yogurt 250 grams
  7. Kewra 3 tbsp
  8. yellow color ½ tsp
  9. green chilies 6 to 8
  10. aniseeds 4 to 4
  11. whole spices 25 grams
  12. fennel seeds 1 tbsp
  13. coriander seeds 1 tbsp
  14. cumin seeds 1 tbsp
  15. ginger garlic paste 2 tbsp
  16. turmeric powder 2 tbsp
  17. Salt to taste
Method
  • • Heat clarified butter in a pot and fry ginger/garlic, onion and chicken.
  • • Put fennel seeds and coriander in a muslin pouch and add to the pot.
  • • When chicken changes color and hot spices, salt turmerica, green chillies and water; fry and remove from flame.
  • • In a separate pot boil rice with aniseed flower, cumins and salt
  • • Layer cooked rice on the top of chicken in the pot and pour 4 tbsp clarified butter over it. Put on dum
  • • Mix and dish out
