Ingredients
  1. 10–12 ounces carrots, grated or matchstick ( about 4- 5 cups, feel free to use store-bought matchsticks)
  2. 1 tablespoon_____ lime or orange zest (or some of both)
  3. 1_____ garlic clove, finely minced ( use a garlic press)
  4. 1_____ teaspoon fresh ginger, finely minced ( or use ginger paste)
  5. ⅓ cup_____ raisins ( golden or regular)
  6. ½ cup_____ toasted cashews ( or slivered almonds)
  7. 3_____ scallions
  8. ½ cup _____cilantro or italian parsley, chopped
  9. 1/4 cup_____ olive oil
  10. 3 tablespoon_____ fresh lime juice (or sub apple cider vinegar)
  11. 2 tablespoons_____ honey or agave or alternative sweetener
  12. ½ teaspoon_____ salt
  13. pepper to_____ taste
  14. ½ teaspoon_____ ground turmeric ( or use 1–2 teaspoons fresh grated)
