Crepes Belle Helene

For the pancakes
• 1/3 cup plain flour (maida)
• 1/3 cup cornflour
• 1/3 cup milk
• 1/3 cup water
• 2 tsp melted ghee or butter
For the pear filling
• 6 fresh pear or 1 small can (450 grams) pears
• 3 tbsp sugar (for fresh pears only)
• 1 tsp lemon juice
• 1/2 tsp grated lemon rind
For the topping
• 100 gms (4 oz.) fresh cream
• 1 1/2 tbsp sugar
• 25 gms grated bitter chocolate
• 2 tbsp almond (badam) slivers
• Vanilla Ice-cream to serve


For the pancakes
Mix the ingredients and prepare pancakes on a non-stick frying pan using ghee.
For the pear filling
• Peel, core and slice the pears.
• Add the sugar, lemon juice, lemon rind and 3/4 teacup of water and cook until soft.
• Chop finely. Keep aside the juice.
How to proceed
• Beat the cream with the sugar.
• To the chocolate, add 1 tablespoon of the cream and heat till it melts. Mix with the rest of the cream.
• Fill each pancake with some pear filling along with a little of its juices.
• Place the pancakes on a baking dish and spread the sweetened cream on them. Sprinkle the sliced almonds on top and bake in a hot oven at 200 degree C (400 degree F) for 5 minutes.
• Serve warm with vanilla ice-cream.

My family is a huge fan of desi food and that encouraged me to try new recipes every now and then. I just checked out this Crepes Belle Helene recipe online while making the menu of upcoming dinner party. It looks different from others.
