Ingredients
  1. 1 large pineapple (approximately 2 lb.) or 1 x 1 lb. 12 oz. can pineapple, drained I large onion
  2. oil for frying
  3. 1 ½ teaspoons chilli powder
  4. 1 teaspoon ground coriander seeds
  5. 1 tablespoon molasses
  6. salt to taste
  7. ½ pint (U.S. 1k cups) water
Method
  • If using fresh pineapple, peel and cut it into small cubes. Slice the onion and fry in a little oil until golden. Add the pineapple, chilli powder and coriander. Cook for five minutes. Add the molasses, salt and water. Simmer for about 30 minutes, until the gravy thickens.
