Small bunch mint leaves
1 tablespoon aniseed
4 tablespoons sugar
2 pints (U.S. 5 cups) water
Crush mint leaves and aniseed. Put sugar and water in a pan on gentle heat. Dissolve sugar then bring to the boil and boil for one minute. Pour boiling syrup over mint and aniseed and leave, covered, to infuse for one hour. Chill and serve.
