INGREDIENTS

50- 0 g (1 lb) carrots, grated
2 large oranges
90 g (3 oz/ 1/3 cup) raisins
60 g (2 0Z/ 1/3 cup) blanched almonds, lightly toasted
lime slices, to garnish
SPICY DRESSING:
2 tablespoons virgin olive oil
2 tablespoons lime juice
1 teaspoon ground cumin
½ teaspoon ground cinnamon
½ teaspoon caster sugar

METHOD

Put carrots into a bowl. Cut peel and pith from oranges. Remove segments and chop. Add to carrots with raisins and almonds.
To make the dressing, mix all the ingredients together in a bowl or screw-top jar. Add to salad. Toss together, then refrigerate for 1 hour. Serve garnished with lime slices.
