INGREDIENTS

1 lb. spinach
2 large onions
1 clove garlic
½ -inch fresh root ginger
2 tomatoes
Oil for frying
½ Teaspoon garam masala
½ teaspoon turmeric powder
½ teaspoon ground coriander
½ teaspoon chilli powder
1 teaspoon sugar
salt to taste
1 pint shrimps, picked

FOR THE GARNISH
Lemon slices

METHOD

Wash and chop spinach coarsely. Slice onion, finely; mince garlic and ginger and chop tomatoes. Heat some oil in a pan and fry the onions lightly for five minutes together with the garlic and ginger. Add the spinach and fry for five minutes. Add tomatoes, all the spices and seasonings and simmer for a further 15 minutes. Put in shrimps and continue to cook for 15 minutes. Garnish with lemon slices and serve with chappati or bread.
