INGREDIENTS

2 lb. spinach
½ inch fresh root ginger
Oil for frying salt to taste
1 teaspoon chilli powder
2 teaspoons ground coriander seeds
1 teaspoon turmeric powder
1 lb. paneer (see page 89)
1 teaspoon garam masala

METHOD

Wash spinach thoroughly. Mince the ginger very finely. Boil spinach, drain and sieve to purée. Heat some oil in a saucepan. Add the spinach and the rest of the ingredients with the exception of the paneer and garam masala. Cook for 10 minutes. Add the diced, fried paneer to the spinach. Cook for 10 minutes, sprinkle with garam masala and serve.
