Ingredients
  1. 1 kg mutton ribs (cut Into serving pieces)
  2. 2 medium-sized onions
  3. 1 piece ginger
  4. 4 flakes garlic
  5. 1/2 tsp saffron strands
  6. 1/4 liter milk
  7. 300 grams fresh curd
  8. 250 grams ghee
  9. 2 tsps pram masala
  10. 1 tbIsp each of powdered cumin and coriander seeds salt and chilli powder to taste
  11. 100 grams almonds (blanched and chopped coarse)
  12. 5O grams mixed nuts (sliced) silver foil
  13. a handful of fresh rose petals
Method
  • Grind the onions, ginger and garlic to a paste. Soak saffron in 1 tblsp of hot milk for 5 minutes and then crush to a paste. Separately, mix together the curd and milk and strain through a cloth. Now cover the mutton with boiling water and cook. Strain out the stock and set the mutton aside. Heat the ghee and fry the onion paste to a golden color, sprinkling a little milk now and then. Add the garam masala, cumin, coriander, chilli powder and mutton, and fry to a red color. Mix in the stock, milk mixture and almonds together with the salt, and keep stirring till the gravy turns thick. Remove from fire and place in a serving dish. Sprinkle saffron on top and garnish with sliced nuts, silver foil and rose petals.
