INGREDIENTS

Mince meat without fat___ half kg
Yoghurt___ 125 grams
Ginger___ 25 grams
Roasted grams___ 25 grams
Green coriander___ as required
Seasoning___ 1 small spoon
Onion___ 250 grams
Ghee___ 250 grams
Gralic___ 8 nos
Poppy seed___ 25 grams
Green chili____ as required
Saffaron___ ¼ small spoon
Fragrant water(rose water)___ 4 large spoon

METHOD

Boil the half minced meat and finely chop the half minced meat.
Add salt, pepper, seasoning, grams and poppy seed(crush them finely) in it.Chop green coriander, ginger, mint, green chili and add them all.
Now take the chopped minced meat and prepare flat or rounded balls of it and redden them into ghee.
Like irani koofta prepare its curry.
Add saffaron(crushed) after mixing into fragrant water(rose water).
Besides add kooftay into boiler for few minutes and cover them.
After 15 minutes remove them. Saffaron koofta are ready now.

Many ways to become koftay hard when it breaks into the bowl for that some chefs mix the besan and flour which is very helpful to make it like a ball, eggs are also helpful for making koftay.

I noted that what mistake I did before using the same method of the preparation of koftay, I never use ghee in it but this time I include and feel the difference in the taste of zafrani koftay.

I feel satisfy about the recipe of zaffrani koftay because I make it many times and every times it becomes good in the taste but little bit my gravy is very light in the color and also very thin, I think I have to use yogurt.

Zaffrani koftay is also much tasty but my husband don’t like the taste of it, he says that my recipe of shahi koftay is good to make a delicious taste and the gravy of this koftay is also good in the taste.
