Ingredients
  1. 8 oz. Patna or Basmati rice
  2. 4 oz. yellow dhal
  3. 4 oz. potato 4 oz. onions
  4. 1 pint (U.S. 2 ½ cups) water
  5. salt to taste oil for frying
  6. 2 oz. each currants, pistachios, almonds
  7. pinch of chilli powder
  8. ½ teaspoon ground coriander seeds
  9. ½ teaspoon ground cummin seeds
  10. sprig curry leaves
  11. or 2 bay leaves
  12. 2 green chillis
  13. 2 I-inch sticks cinnamon
Method
  • Wash rice and dhal well in running water. Soak separately for at least 30 minutes. Meanwhile cube potato and slice onions. Now boil the rice in the water for five minutes before adding the dhal, add salt and cook gently till done adding more water if necessary. Fry half the onions and all the potatoes and add to the rice. Lightly fry the currants and nuts and add them too. Add the chilli powder, coriander and cummin. Stir well and remove from the heat. Fry the rest of the onions, curry leaves and chopped green chillis and add to the rice. Put in the cinnamon and replace the pan on a low heat and cook for a further five minutes.
