Ingredients
  1. 2 onions
  2. 2 green chillis
  3. 1-inch fresh root ginger 2 cloves garlic
  4. 1 ½ lb. courgettes Oil for frying
  5. 1 teaspoon chilli powder
  6. 1 teaspoon turmeric powder
  7. ½ teaspoon ground cummin seeds
  8. * walnut-sized pier,: of tamarind, soaked in
  9. a little hot water
  10. 2 teaspoons vinegar salt to taste
  11. 2 teaspoons mollasses
  12. ½ pint (U.S. 1 ¼ cups) water
  13. 1 lb. peeled prawns
  14. * Squeeze the husk and strain; use only the water.
Method
  • Mince the onions, chillis, ginger and garlic. Slice the courgettes into rounds. Heat some oil in a sauce¬pan and fry the onions till brown. Add the chillis, ginger and garlic and fry for a minute or two before adding the chilli powder, turmeric, cumrnin seeds, tamarind water, vinegar, salt and mollasses. Fry for five minutes and add the water. Contirnre cooking, uncovered, for 15 minutes before adding the cour-gettes. Stir, cover and cook for a further 15 minutes. Add the prawns and cook for 10 more minutes.
