Ingredients
  1. 4 Brinjal
  2. 1/2 kg Yogurt
  3. 1 cup Fresh milk
  4. 4 Green chilies chopped
  5. 1/2 bunch Coriander leaves chopped
  6. 1/2 bunch Mint leaves chopped
  7. 1 tsp Black pepper crushed
  8. 1 tsp Roasted & crushed cumin
  9. as required Sugar
  10. to taste Salt
  11. for Baghaar
  12. 4 Whole red chilies
  13. Few Fenugreek seeds
  14. Few Curry leaves
  15. 1 piece Coal
  16. 1/2 cup Oil
  17. 1/2 tsp White cumin seeds
Method
  • Cut brinjal into round slices and soak in water as required.
  • In a bowl mix together ½ kg yogurt, 1 cup fresh milk, salt to taste, 1 tbsp sugar, 4 chopped green chilies, ½ bunch of chopped coriander leaves, 1 tsp roasted ground cumin and 1 tsp all spice powder. Mix well and keep aside.
  • Now dry brinjal slices and fry in hot oil.Now spread a layer of spiced yogurt in a serving dish. Arrange fried brinjal slices on yogurt.
  • Pour the remaining yogurt on top. Put a burning coal in dish, drop some oil and cover for 2 minutes.
  • Now remove coal.In separate pan heat ½ cup oil, add in a pinch of fenugreek seeds, few curry leaves, 4 whole red chilies and ½ tsp cumin seeds. Pour baghaar on top of yogurt mixture and serve.
