Ingredients
  1. • 2 bananas, peeled
  2. • 4 oz. yam
  3. • 3 sticks celery
  4. • 1 cucumber
  5. • 4 oz. courgette
  6. • 3 tablespoons water
  7. • 1 teaspoon chili powder
  8. • ½ teaspoon turmeric powder Salt to taste
  9. • 2 green chills
  10. • 2 cartons yoghurt (optional)
  11. • ½ teaspoon ground cumin seeds
  12. • 2 tablespoons desiccated coconut, soaked in
  13. • 2 tablespoons milk
  14. • Sprig of curry leaves (optional)
Method
  • Cut the bananas and vegetables into i-inch thick slices and simmer in a little water with the chilli powder, turmeric and salt. Meanwhile, mince the green chillis finely and mix with the yoghurt if used, along with the cummin and strained coconut milk. When the vegetables are cooked, drain and return to the cooker. Add the chills and cook for 5 more minutes. Fry the curry leaves in a little oil and add to the vegetables before serving.
