Ingredients
  1. 1) Prawns 40 large
  2. 2) Dry red chillies 30
  3. 3) Peppercorns 1 tsp
  4. 4) Mustard seeds 1 tsp
  5. 5) Fenugreek seeds 1 1/2 tsp
  6. 6) Coriander 2 dessertspoons
  7. 7) Turmeric 1 inch piece
  8. 8) Cloves of garlic 14
  9. 9) Green chilies 10
  10. 10) Small onions 13
  11. 11) Ginger 1 piece
  12. 12) 1 sprig curry leaves
  13. 13) Tamarind (1 dessertspoon soaked in a little hot water)
  14. 14) Oil
  15. 15) Salt to taste
Method
  • 1. Fry and grind the pepper, mustard, fenugreek, coriander and turmeric and set aside.
  • 2. Grind the red chilies to a paste.
  • 3. Heat enough oil in a pan and fry a few curry leaves and tamarind, add finely chopped onions, crushed garlic and ginger, the red chili paste and the green chilies cut into small pieces.
  • 4. Place the prawns in this, then add the ground spices and salt to taste, and enough water to cover the prawns.
  • 5. Cook until water is absorbed and the prawns are tender.
