Ingredients
  1. 1) 1/2 kg long grain rice
  2. 2) 200 gm ochre lentils (skinned)
  3. 3) 2 onions, finely sliced
  4. 4) 1 tsp ginger paste
  5. 5) 1 tsp garlic paste
  6. 6) 1 tsp turmeric powder
  7. 7) 1/2 tsp red chilli powder
  8. 8) A few sprigs of fresh green coriander, mint leaves chopped
  9. 9) 2 green chillies slit
  10. 10) 1 tbsp oil
  11. 11) 2 tbsp ghee
  12. 12) Salt to taste
  13. Grind
  14. 1) 1/2 piece cinnamon
  15. 2) 4 cardamoms
  16. 3) 1/2 tsp caraway seeds
  17. 4) 1/2 tsp peppercorn
Method
  • 1. Wash and soak ochre lentils for 20 minutes.
  • 2. Boil in just enough water with turmeric, till tender.
  • 3. Wash and soak rice for 20 minutes. Bring water to boil.
  • 4. Parboil rice with a little salt.
  • 5. Drain the rice and set aside. Heat the oil.
  • 6. Fry onions till golden brown.
  • 7. Remove half and set aside. Add ginger and garlic paste and fry till golden.
  • 8. Add turmeric and stir; add lentils and red chilli powder.
  • 9. Cook for three minutes. Take a heavy-bottomed pan and brush a little oil in it. Spread half the parboiled rice; spread the lentils over the rice.
  • 10. Sprinkle the ground spices.
  • 11. Spread half of the coriander, mint and green chillies. Cover with remaining rice.
  • 12. Sprinkle the fried onions, the rest of the coriander, mint leaves and green chillies and dot the rice with ghee.
  • 13. Cook for about 10 minutes.

I am looking for a decent and easy to make recipe for Eid ul Adha. Then I saw this Hyderabadi Khichdi recipe here which seems tempting. The method is easy and less time taking. Let’s see how it turns out to be in taste!
