Ingredients
  1. 1 lb. chick peas
  2. 1 ½ pints (U.S. 3 ¾ - cups) water
  3. 1 onion
  4. 1 dove garlic
  5. 1-inch fresh root ginger
  6. 1 ½ lb. leg of lamb, boned
  7. 2 ripe tomatoes Oil for frying
  8. 1 teaspoon garam masala
  9. ½ teaspoon ground cummin seeds 1 teaspoon chilli powder
  10. 3/2 pint (U.S. 2 cups) water
  11. Juice of 1/2 lemon
  12. Salt to taste
Method
  • Soak chick peas in water for 24 hours. Par-boil in 1 ½ pint& of water and drain. Chop onion, crush garlic, mince ginger finely. Cut lamb into cubes and chop tomatoes. Heat oil in a pan and fry the onion for four minutes. Add garlic and ginger and fry for another minute. Add the ground spices, lamb and tomatoes. Cook for 15 minutes. Add water and lemon juice, chick peas and salt. Simmer till gravy is thick and meat tender.
