Heat ¼ cup oil in a wok, add 2 tbsp desiccated coconut. Fry for awhile.
Now add 1 chopped onion, 3 – 4 chopped green chilies and 3 tbsp tomato puree.
Also add 1 tsp chili powder, 1 tsp coriander powder, 1 tsp cumin powder, ½ tsp all spice powder, 1 tsp turmeric and salt to taste. Mix well.
Lastly add 3 – 4 boiled chopped eggs, 300 gm boiled rice, ¼ bunch of coriander leaves and mix gently.
Dish it out and serve hot.
