Ingredients
  1. • 2 cups - rice
  2. • 1 - medium sized bunch of methi leaves (washed and finely chopped)
  3. • 5 to 6 tbsp - oil
  4. • 1 tsp - cumin seeds
  5. • 1 - big tomato (finely chopped)
  6. • 2 to 3 tsp - red chilli powder
  7. • 2 1/2 tsp - coriander powder
  8. • 3/4 tsp - turmeric powder
  9. • 3 1/4 cups - water
  10. • salt to taste
Method
  • 1. Wash and soak the rice for 20 minutes.
  • 2. Heat oil in a dekchi.
  • 3. Add the cumin seeds.
  • 4. When they splutter add the methi leaves and saut� for 8 to 10 minutes on a low flame.
  • 5. Add the tomatoes and the powdered masalas and fry till the tomatoes are soft and oil separates.
  • 6. Add the rice, salt and water.
  • 7. Mix well. Cook on a high flame till one boil.
  • 8. Simmer. Mix gently a couple of times at regular intervals.
  • 9. Cook till the rice is done.
  • 10. Serve hot with any raita.
