Ingredients
  1. Chicken ½ kg
    Rice300 gm
    Ginger garlic paste1 tbsp
    Saltto taste
    Onion1
    Yogurt125 gm
    Crushed red pepper1 tsp
    Crushed coriander1 tbsp
    Crushed cumin seeds1 tbsp
    Nutmeg mace powder½ tsp
    Mix whole spicesas required
    Yellow colora pinch
    Butter3 tbsp
    Ghee3 tbsp
    Green chilies2 – 3
    Milk1 cup
    Water1 glass
    Vermicelli½ packet
    Khoya125 gm
    Boiled almond25 gm
    Boiled pistachio25 gm
    Raisin25 gm
Method
  • Heat ghee and butter in a pan, add in chopped onion and ginger garlic paste. Fry well for 1 – 2 minutes.
    Then add mix whole spice and ½ kg chicken. Fry well till chicken is golden brown.
    Now add green chilies, yogurt, crushed red pepper, crushed coriander and crushed cumin seeds. Fry well for 1 – 2 minutes.
    Add soaked rice, salt to taste and a little water. cook till rice stats coming on top.
    Then add milk, almond, pistachios, khoya, raisins and vermicelli. Mix well.
    Lastly sprinkle yellow color on top. Simmer on low flame for 8 – 10 minutes.
    Dish it out and serve hot.

Actually in my home no one wants to eat much spicy that is why I want to know that can I reduce the weight of mix whole spices for the preparation of mughlai pulao?

no doubt it is the best pulao I have ever tasted. The problem is that it is not easily available in restaurants that is why you can only make it yourself. Normally, you would find only at hotels but not this one. I suggest. try it at least one time .
