Ingredients
  1. 500 grams mutton (cut into serving portions)
  2. 5 flakes garlic
  3. 1/2 cup ghee
  4. 300 grams onions (sliced)
  5. 2 piece ginger (minced)
  6. 1 tsp each of turmeric powder and gararm masala
  7. 4 cloves
  8. 2 large cardamoms
  9. 1 bay leaf
  10. 1 piece cinnamon stick
  11. salt and chilli powder to taste
  12. 125 grams tomatoes (blanched and sliced)
  13. 125 grams sour curd
  14. a few sprigs coriander leaves
Method
  • Crush the garlic. Now heat the ghee and fry -half the onions, ginger and garlic to a golden color. Add the turmeric powder, garam masala, cloves, cardamoms, bay leaf, cinnamon, salt, chilli powder and tomatoes and fry to a golden color. Add the rest of the onions and continue frying till dry. Mix in the curd, and then the mutton. Cover Light and cook over a slow fire till the mutton is tender and dry. Then open the lid and keep stirring till the ghee floats over to the top. Serve garnished with chopped coriander leaves.
