Ingredients
  1. 1 kg boneless mutton (cut into 1 squares)
  2. I lime-sized ball of tamarind
  3. 1 large onion
  4. 1 piece ginger
  5. 8 flakes garlic
  6. 1 tblsp each of pounded
  7. cumin seeds, coriander
  8. powder and garam masala salt and chilli powder to taste
  9. a little ghee
  10. For curry:
  11. 4 tblsps ghee
  12. 1/2 tsp turmeric powder 2 medium-sized tomatoes
  13. (blanched and sliced) 1/4 cup sour curd
  14. 1 tsp garam masala salt to taste
  15. 2 cups coconut milk
  16. 1 handful coriander leaves (chopped)
Method
  • Cover the tamarind with Hot water for 5 minutes, then squeeze out the juice. Grind the onion, ginger and garlic to a paste and mix into the tamarind, along with the mutton, cumin, coriander powder, garam masala, salt and chilli powder. Set aside for I hour. Thread the meat on skewers and roast over an open fire, basting frequently with ghee till the mutton is tender, and a rich brown in color. Remove from skewers and place in a serving plate. To prepare the-curry, heat 4 tblsps of ghee and add the turmeric, tomatoes, curd, garam masala and salt. Cook till the ghee floats to the top. Add coconut milk and cook over slow fire till the curry turns thick. Now pour over the prepared mutton. Serve hot, garnished with coriander leaves.
