Ingredients
  1. 1) Peeled devined prawns 12-16 medium sized
  2. 2) Curry powder 1 tsp
  3. 3) Crushed pepper corn 1 tsp
  4. 4) Salt to taste
  5. 5) Lemon juice 2 tbsp
  6. 6) Capsicum 2 medium sized
  7. 7) Tomatoes 2 medium sized
  8. 8) Onions 2 medium sized
  9. For Sauce:
  10. 1) Onion 1 medium sized
  11. 2) Ginger 1 inch knob
  12. 3) Green apples 2 medium sized
  13. 4) Lemon juice 1 tbsp
  14. 5) Oil 1 tbsp
  15. 6) Bay leaf 1
  16. 7) Curry powder 2 tsp
  17. 8) White pepper powder 1/4 tsp
  18. 9) Salt to taste
Method
  • 1.For Shaslik:
  • 2. Wash and pat dry the prawns and marinate them in curry powder, crushed pepper corn, salt and lemon juice and refrigerate until required.
  • 3.Wash, halve, dessed capsicum and cut into one inch sized squared pieces.
  • 4.Wash and cut the tomatoes in quarters, dessed and cut each quarter into two.
  • 5.Peel and cut onions into quarters and separate onion segments.
  • 6.Mix capsicum, tomato and onion pieces with the marinated prawns and refrigerate for 15-20 minutes.
  • 7.Skewer the marinated prawns and vegetables on a eight inch wooden skewer.
  • 8.Heat a non-stick tawa, brush with a little oil and place the skewered prawns.
  • 9.Cook them on medium heat, turning occasionally, for 5-6 minutes or till prawns are just done.
  • 10.Serve hot topped with apple curry sauce.
  • 11.For Sauce:
  • 12.Peel and roughly chop onion and ginger.
  • 13.Wash, core and roughly chop the green apples.
  • 14.Mix the apple with lemon juice to prevent discolouration.
  • 15.Heat oil in a non-stick pan, add bay leaf, chopped onion and ginger.
  • 16.Cook on high heat, stirring continuously, for 3-4 minutes or till it just starts turning brown.
  • 17.Add chopped green apples with one cup water and boil.
  • 18.Reduce heat and simmer for five to six mintues or till the apples are cooked and soft.
  • 19.Add curry powder, white pepper powder and salt to taste.
  • 20.Cool, remove the bay leaf and puree the apple mixture.
  • 21.Pass it through a sieve and keep warm.
