  1. 12 raw Mediterranean (king) prawns
  2. 125g mange tout (snow peas) trimmed
  3. 3 tablespoons virgin olive oil
  4. 1 tablespoon finely shredded fresh root ginger
  5. Juice and grated peel of 1 lime
  6. 3 teaspoons soy sauce
Method
  • Peel prawns, leaving tail shells on. Make a small incision along spines. Remove black spinal cords from prawns. Cook mange tour (snow peas) in boiling water for 1 minute, drain and arrange on 4 plates.
  • Heat the oil in a large frying pan, add prawns and ginger and cook gently for 5 minutes, turning them once.
  • Add lime juice, peel and soy sauce; cook for 1 minute. Arrange the prawns on the mange tout (snow peas), then pour over dressing. Serve at once.
