Ingredients
  1. 500g rocket, washed and spin dried
  2. 100g pumpkin, cut into small cubes
  3. 50g feta cheese, cubed
  4. 1/8 cup pine nuts
  5. Fresh ground pepper
  6. Fresh ground sea salt
  7. Olive oil
  8. Dressing:
  9. 1/2 cup olive oil
  10. 1/3 cup balsamic vinegar
  11. 1 tbsp mustard
  12. 2 tbsp honey (depending how sweet you like your dressing)
  13. Fresh ground sea salt
  14. Fresh ground pepper
Method
  • Pre-heat oven at 200 degree C. In a baking sheet, drizzle some olive oil, add the pumpkin cubes, season with salt and pepper and drizzle some more olive oil on top.
  • Roast in the oven for 20 minutes
  • To prepare the dressing, mix all the ingredients and taste to make sure that the flavours suite your taste. Keep on the side
  • In a large serving plate place the rocket on the base, add the roasted pumpkin, feta cheese and pine nuts. Finally before serving, top the salad dressing across the platter and serve.
  • Great starter before any main course dish.
