Ingredients
  1. 1 medium-sized chicken
  2. 2 onions
  3. 1 ½ -inch fresh root ginger
  4. 2 cloves garlic
  5. 2 potatoes, peeled
  6. Oil for frying
  7. ½ teaspoon turmeric powder
  8. 2 tablespoons ground cummin seeds
  9. 1 teaspoon garam masala
  10. 2 green chillis
  11. A sprig of curry leaves
  12. or 2 bay leaves
  13. 1 pint (U.S. 2 ½ cups) water
  14. 4 oz. creamed coconut
  15. Salt to taste
Method
  • Joint the chicken. Finely mince onions, ginger and garlic separately. Dice potatoes. Fry onions and ginger in oil until lightly browned. Add garlic, turmeric, cummin arid garam masala. Fry for three minutes. Slit green chillis and add together with the curry leaves. Now add chicken pieces and fry till well browned. Pour in the water and cook till half done. Add potatoes and continue to simmer. Add the creamed coconut 15 minutes before the end of cooking time. Add salt to taste and serve with rice and chutney.
