Ingredients
  1. • 4 tablespoons olive or groundnut oil
  2. • ½ teaspoon brown mustard seeds
  3. • 2 dried hot red chillies, each broken into 2–3 pieces
  4. • 4 garlic cloves, finely chopped
  5. • 450g (1lb) medium-sized raw prawns, peeled, de-veined, rinsed and patted dry
  6. • ½ teaspoon salt
  7. • 1 tablespoon finely chopped fresh mint
  8. • Few squeezes lemon juice
Method
  • 1. Put the oil in a large frying pan and set it over high heat.When the oil is very hot, put in the mustard seeds and red chillies. As soon as the mustard seeds start to pop – a matter of seconds – add the garlic and stir-fry for 3–4 seconds.
  • 2. Add the prawns and salt. Stir-fry until the prawns turn completely opaque.
  • 3. Stir in the mint and lemon juice to taste and serve immediately.
