1.Gut & Wash the pomfrets.
2.Make incisions on both sides and rub in salt and lemon juice.
3.Set aside for twenty minutes.
4.Grind ginger & garlic to a fine paste.
5.Mix rest of the ingredients except butter.
6.Rub the mixture over the fish and leave to marinate for about one hour in the refrigerator.
7.Thread each pomfret on a skewer and cook it in moderate hot tandoor for about eight to ten minutes.
8.Baste with butter and cook for another three minutes.
9.Serve hot with lemon wedges.
