Ingredients
  1. 500 grams tomatoes (blanched and sliced)
  2. 25 grams cashewnuts (fried) silver foil
  3. 25 grams each of almonds, peanuts and blanched walnuts
  4. 1 1/2 tsp poppy-seeds
  5. 1 piece ginger
  6. 4 tsp ghee
  7. a little milk (plain)
  8. 4 tsp curd (beaten)
  9. 1/2 tsp each of turmeric powder, garam masala and ground cumin seeds
  10. salt and chilli powder to taste
  11. 1 cup coconut milk
  12. 2 tsp cream
  13. a few sprigs coriander leaves (chopped)
Method
  • Cover the cashewnuts with foil. Grind the rest of the ruts, poppy-seeds and ginger to a paste. Heat the ghee and fry the paste, sprinkling a little 'milk now and then till the ghee floats to the surface. Mix the curd, all the spices, salt and chilli powder, and cook till the mixture turns dry. Add the tomatoes and mash them. When they turn soft, add the coconut milk. Heat to simmering and remove from fire. Place in a serving dish, mix in the cream, and garnish with cashewnuts and fresh coriander leaves.
