Ingredients
  1. For Lasagna:
  2. • Potato 2 (cut into cubes)
  3. • Carrot 1 (cut into cubes)
  4. • Peas 1 cup
  5. • Sweet corn ½ cup
  6. • Beans 1 cup
  7. • Capsicum 1 (chopped)
  8. • Mushrooms 4 to 5 (sliced)
  9. • Lasagna strips 9
  10. For Baghar:
  11. • Oil ¼ cup
  12. • Onion 1 (chopped)
  13. • Red chili 8 – 10 (whole)
  14. • Curry leaves 10 – 12
  15. • White cumin 1 tsp
  16. • Mustard seeds ½ tsp
  17. • Garlic 1 tsp
  18. • Oregano leaves 1 tsp (chopped)
  19. • Tomato 3 – 4 (chopped)
  20. • Salt 1 tsp
  21. • Red chili powder 1 tsp
  22. • Turmeric ½ tsp
  23. • Chicken stock 1 cube
  24. • Cheddar cheese 2 tbsp
  25. • Butter 2 tbsp
  26. • Tomato ketchup 4 tbsp
  27. • Lemongrass for garnishing
  28. For white sauce:
  29. • Milk ½ kg
  30. • Butter 2 tbsp
  31. • All purpose flour 2 tbsp
  32. • Salt ¼ tsp
  33. • Mustard powder ¼ tsp
  34. • White pepper ¼ tsp
  35. • Cheddar cheese 2 tbsp
Method
  • 1. Heat oil in a pan. Then add red chili powder, curry leaves, white cumin, and oregano and mustard seeds for baghar.
  • 2. Now add onions, tomatoes and garlic and fry for a while.
  • 3. Then add salt, red chili powder and turmeric to roast well.
  • 4. Now add peas, beans, carrot, potatoes and sweet corn in a pan and cook until tender.
  • 5. When all the vegetables become tenderized, add capsicum and mushrooms to cook until tender.
  • 6. Turn off the flame and mix chicken stock cube.
  • 7. Preheat oven at gas mark 4 and 180 degree C.
  • 8. Take a big bowl, add water and oil to it.
  • 9. Heat up this water and oil on low heat.
  • 10. When it becomes hot then adds lasagna strips and cook for 15 to 20 minutes.
  • 11. Grease baking tray, cut lasagna strips and then do filling on strips with tomato ketchup, vegetables, oregano leaves and white sauce.
  • 12. Then spread white sauce over filling.
  • 13. Then spread cheddar cheese, oregano leaves, little tomato ketchup and butter.
  • 14. Bake in preheated oven to 180 degree C for 15 to 20 minutes.
  • 15. Delicious vegetable lasagna is ready. Garnish with lemon grass.
  • For White Sauce:
  • 1. Add butter, all purpose flour, salt, and white pepper and mustard powder in a pan to cook.
  • 2. Then add milk and mix well.
  • 3. Cook sauce for few minutes then turn off flame.
  • 4. Finally mix two tablespoon cheddar cheese. White sauce is ready.
