INGREDIENTS

2 onions
12 oz. carrots
1 tomato
1 green chilli
oil for frying
1 teaspoon flour
¼ teaspoon fenugreek (optional) 12 oz. cashew nuts
½ teaspoon garam masala
¼ teaspoon ground ginger scant ¼ pint (U.S. 4 cup) milk salt to taste

METHOD

Chop the onions and cut the carrots into quarters. Chop the tomato then finely mince the chilli. Fry the onions gently in a little oil until transparent. Add the flour, stir and cook for one minute before adding the fenugreek and tomato then cook for a further two minutes. Put in the carrots and nuts, stir and add the garam masala, chilli and ginger. Pour in the milk, stir until thickened then add salt. Cover and simmer gently, stirring occasionally, until carrots are tender.
