Ingredients
  1. 1) Leg of veal 2 1/2 - 3 kg
  2. 2) Cardamoms 2 large
  3. 3) Cloves 3
  4. 4) Mustard 1-2 tsp
  5. 5) Onion, sliced 1
  6. 6) Butter 50 g
  7. 7) Unmelted ghee 50 g
Method
  • 1. Make small incisions in meat and insert cloves with head exposed.
  • 2. Put half of the butter, ghee and onions in the pan, add meat and remaining ingredients on top of meat.
  • 3. Cover and cook on high heat for 10-15 minutes to brown onions and meat.
  • 4. Turn meat and brown on other side.
  • 5. Cover and simmer on low flame till meat is cooked, about 2½ - 3 hours. To prevent meat from burning check every half hour.
  • 6. Serve in its own gravy with roast potatoes.
