Ingredients
  1. 1/2 kg Mutton
  2. 1/2 kg Rice
  3. 3 Onion chopped
  4. 1 stick Cinnamon
  5. 4 Black cardamom
  6. 4 Green cardamom
  7. 50 gm Apricot
  8. 1/2 kg Yogurt
  9. 1/2 cup Milk
  10. 1 bunch Mint leaves
  11. 10 Green chilies
  12. 250 gm Oil
  13. 1 tsp Black cumin seeds
  14. 1 tsp Turmeric powder
  15. 1 tsp All spice powder
  16. 1 tbsp Ginger garlic paste
  17. 2 tsp Chili powder
  18. 1/2 tsp Nutmeg and mace powder
  19. 1/2 tsp Saffron essence
  20. to taste Salt
Method
  • In a pan boil 1/2 kg Rice, drain and leave it to cool. Heat oil in another pan, add 3 chopped Onion and fry till its color turn to golden brown. Add 1/2 kg Mutton and 1 glass water. Cover and cook till meat is tender. Now add 1 Cinnamon stick, 4 Black cardamoms, 4 Green cardamoms, 1/2 kg Yogurt, 1 tbsp Ginger garlic paste, 2 tsp Chili powder, 1 tsp all spice powder, 1 tsp Black cumin seeds, Salt to taste, 1 tsp Turmeric powder, 1/2 tsp Nutmeg and mace powder. Mix and fry well. Add 1 bunch of Mint leaves and 10 Green chilies, top with boiled rice. Separately fry 50 gm apricot and add to the pan. Dissolve a pinch of yellow color in 1/2 cup Milk and pour on top of boiled rice. Lastly spread 1/2 tsp Saffron essence and simmer for 20 minutes. Serve hot with Raita.
