Ingredients
  1. 500g baby spinach, washed and spin dried
  2. 1 orange capsicums, wash cut into eighths
  3. 50g feta cheese, cubed
  4. 1/8 cup pine nuts
  5. Dressing:
  6. 1/2 cup olive oil
  7. 1/3 cup balsamic vinegar
  8. 1 tbsp mustard
  9. 1 tbsp honey
  10. 1 - 2 tbsp fig preserve (depending how sweet you like your dressing)
  11. fresh ground sea salt
  12. fresh ground pepper
Method
  • Pre-heat oven at 200 degree C. In a baking sheet, drizzle some olive oil, add the capsicum, and drizzle some more olive oil on top. Roast in the oven for 20 minutes
  • To prepare the dressing, mix all the ingredients and taste to make sure that the flavours suite your taste. Keep on the side
  • In a large serving plate place the spinach on the base, add the roasted pepper, feta cheese and pine nutes. Finally before serving, top the salad dressing across the platter and serve.
  • Great starter before the main course dish.
