Ingredients
  1. 1 ripe, golden pineapple
  2. 1/4 tsp saffron essence
  3. 2 cups sugar
  4. silver or gold foil
  5. a few drops of yellow food colouring
Method
  • Peel, slice and core the pineapple. Remove all the eyes carefully and cut into large pieces. Cover pineapple with water and boil till tender. Strain out the water and set the pineapple aside. Now place the same water over the fire, mix in the sugar and cook to a thick syrup. Mix in the pine-apple and food colouring add continue cooking till the syrup turns thick. Remove from fire, add the saffron, and cover each piece of pineapple with foil. Store in a bottle.
