Ingredients
  1. 25 grams sugar candy (broken Into tiny bits)
  2. a few drops rose essence 1 tblsp shabjeera
  3. gold foil
  4. a couple of sweet-smelling roses
  5. For Yakhni:
  6. 1 kg mutton
  7. 8 flakes garlic (minced)
  8. 2 piece ginger (minced) 1/2 cup ghee
  9. 250 grams onions (sliced fine) 2 tbIsps each of garam masala and coriander powder
  10. salt to taste
Method
  • To prepare the yakhni, grind the garlic and ginger to a paste rub on to the mutton. Heat 1/2 cup of ghee and fry the onions till they start changing color. Add the mutton and Ty to a red color. Mix in the garam masala, coriander powder and salt. Cover meat completely with hot water and cook the mutton till soft. Remove from fire and strain the yakhni.
  • To prepare the rice, heat 4 tblsps of ghee, adding the whole spices and onions, and fry to a golden co/our. Add the rice and curd and cook till the mixture turns dry. Now add the yakhni, along with enough water to stand an inch above the level of the rice. Bring to a rolling boil, reduce heat, and cook till almost all the moisture is absorbed. Now divide the rice into 4 equal portions. Color one portion with red, one portion with green and one with the yellow food coloring. Leave one portion white. After a few minutes, mix together all the portions of rice. Now take a large flame-proof glass dish and grease it well. Arrange a layer of rice on this. Sprinkle with mixed nuts, raisins, sugar candy and rose essence. Cover this with a layer of the cooked mutton. Keep arranging the ingredients in layers in this way till all the ingredients have been used up. Start and finish with a layer of rice. Sprinkle shahjeera on top, then heat 4 tblsps of ghee to smoking and pour all over. Cover tight and place over a very slow fire for 5 minutes. Remove from fire and cover the top with foil. Finally, garnish with rose petals in any design you like. Serve on the table in the same dish.
