• 1tbsp olive oil
• 1 onion (finely chopped)
• 2 cloves garlic (crushed)
• 1tsp ground cumin
• 1tsp ground coriander
• 1tsp paprika
• 400g red kidney beans
• Flour (for dusting)
• Vegetable oil (for frying)
• Nan (to serve)
Heat olive oil in a pan and fry onion for about 8 minutes until softened.
Add garlic, cumin, coriander, paprika and kidney beans. Cook for 5 minutes.
Put mixture into a bowl and mash until it forms a coarse paste. Set aside to cool.
When cool, place in the refrigerator for about 30 minutes, until mixture is firm. Using floured hands, form 16 walnut-sized balls and roll in flour.
Fry in batches for 8 minutes. Drain on kitchen paper.
Serve with Nan and raita.
